KIMCHI FRIED RICE
PREP 10 MINS COOK 10 MINS SERVES 2 (AS A MAIN)
1½ Tbsp olive oil1 clove garlic, sliced4cm piece ginger, grated1 bunch broccolini, chopped4 green shallots, thinly sliced50g kimchi200g cooked Doongara Low Gi Brown Rice2 carrots, peeled into ribbons2 x 60g eggs Freshly ground black pepper1 lime, ½ juiced, ½ cut into wedges, to serveHandful coriander leavesHot sauce or gluten-free sauce, to serve (optional)
1 Heat 1 tablespoon of the oil in a large non-stick frying pan over medium-high heat. Add the garlic, ginger, broccolini and half the green shallots. Cook, stirring often, for 5-7 minutes or until softened. Add the kimchi and cook, stirring, for 2 minutes.
