Ingredients for the cookies
230g cold butter
½ cup sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla essence
3 cups flour
1 teaspoon bicarb
250g strawberries, finely chopped
For the filling:
250g cream cheese (room temperature)
½ cup icing sugar
Method
Beat the cream cheese until smooth, add in the icing sugar, and mix until well combined.
Using a cookie scoop, add teaspoon amounts on a baking tray and pop in the freezer for an hour or until it is firm.
In a cake or stand mixer, add the butter, sugars, and mix until smooth and creamy.
Add in the eggs and vanilla essence, and mix well. Add in the flour and bicarb, and using a spoon, mix until a firm cookie dough is formed.
