Ingredients
*For the dough
250g butter
1 cup sugar
1 large egg
1 tsp vanilla essence
3 cups flour
1 tsp baking powder
¼ tsp salt
*For the filling
5 large Granny Smith apples (sliced & peeled)
½ cup sugar
¼ cup water
A few cinnamon sticks and cardamom pods
1/3 cup apricot jam
Method
Cream the butter, sugar and eggs. Add vanilla essence.
Sieve all the dry ingredients and combine with wet ingredients in a mixer to form a dough.
For the filling, cook apples, sugar, water, cinnamon and cardamom for 10 to 15 minutes until tender, and the liquid is glossy and slightly syrupy. Leave to cool.
