I went on my first cruise with my mum, dad and brother when I was about eight years old to the Caribbean. It was a beautiful huge liner, we ended the holiday by staying on the island of Guadeloupe. More recently I went on a stunning 10-day cruise around Turkey and Greece as a guest of Caprice Bourret. We sailed on the most gorgeous private yacht, it was like something out of Peter Pan. It was an amazing trip. I’m dying to visit India as soon as I can, not least because I really love Indian food. I’m passionate about healthy living and eating. DEVIL’S FOOD CAKE SERVES 12–16 This is simply the best chocolate cake I’ve ever eaten. It was given to me by Rebecca, who works behind the scenes for Bake Off. INGREDIENTS For the frosting 200ml double cream 350g butter 450g dark chocolate, finely chopped For the sponges 75g cocoa powder 150g light brown sugar 2 tsp vanilla paste 335g plain flour 1 tsp baking powder 1 tsp bicarbonate of soda 200g butter plus extra for greasing 225g caster sugar 3 large eggs For the decoration 150g dark chocolate (70% cocoa solids) METHOD • For the frosting, pour the cream into a saucepan, add the butter and heat, stirring occasionally, until melted. And this makes sense as no other single industry relies more on our planet’s oceans and seas, the pristine beauty of the world’s harbours and seaside communities than ours. Each year cruise lines invest tens of millions into finding new technologies that lessen the environmental impact of ships, such as solar panels and liquefied natural gas (LNG) which help to reduce emissions.
