SCALLOPS WITH CHEESE SAUCE SERVES 4 INGREDIENTS 8 scallops, with 4 shells if possible 150 ml water 4 tbsp medium-dry white wine 1 bay leaf Salt Black pepper Lemon wedges and chopped coriander to garnish FOR THE MORNAY SAUCE 45g butter 3 tbsp plain flour 4 tbsp single cream 60g Gruyère cheese, grated METHOD • Cut each scallop into 2–3 pieces. Put the measured water, wine, and bay leaf into a small pan, and season with salt and pepper. Although there have been shows on individual ships before, there has never been a show of this scale that explores the exciting design stories of liners in so many countries. I was a curator in the Research Department of the Victoria and Albert Museum for many years, and while working on a number of projects including exhibitions on Art Deco, Surrealism and British Design, I came across many pieces in the V&A that were either made for ocean liners or made to promote them. On board the décor was stylish, there were clean rooms and good choices of cuisine. We also had a choice of dining options. The destinations we visited included Havana in Cuba. We loved Old Havana. It’s full of architectural gems. There is also the 16th-century Morro Castle and the iconic Revolution Square. Montego Bay in Jamaica was a highlight.
