A walk in the woods near her home in Naphill, Buckinghamshire, is how wallpaper and fabric designer Alison Gee starts each day. She never tires of its beauty, which has also been the inspiration behind many of her patterns. Alison started on the path towards the career she loves with Morris & Co by studying textiles design at Chelsea College of Art. With sweeping views towards the Usk Valley, there is a heightened awareness of the ebb and flow of the seasons in Joanna Kerr’s garden. The constantly changing landscape made an unforgettable impression when Joanna and her husband, Murray, first set eyes on the garden at Glebe House near Abergavenny in Gwent. ‘I was immediately struck by the 360-degree views and the feeling of space,’ Joanna recalls. Watch Teresa Cole rummaging through a flea-market and you will see her excitement levels rising as she moves past the vintage florals in search of something altogether more basic and battered. These often-discarded utilitarian gems send her heart racing. In Joanna’s garden, the borders are now so full that they are not dug – instead, it is a question of editing and primping... Need to know... • Aim to create interesting plant combinations, both in terms of colour and shape — tall against short, narrow versus broad. • Visit other gardens to find inspiring plant combinations — always take a notebook with you or snap them on your phone. • In October, thin out any congested clumps of perennials by lifting and dividing. • Once everything has almost died back, see where there are spaces to insert new tulip bulbs to add to the existing clumps. However, there is funding and business support out there if you know where to start. Research who you want to target. SEA SCALLOPS WITH CAULIFLOWER PUREE AND CAPERS This recipe is not one of mine, but borrowed from my friend Cyrille, a Frenchman from Brittany who is a pedigree chef with experience in the finest restaurants. SERVES 4 1 navel orange 1 head of cauliflower 90g unsalted butter 20 large sea scallops Fine sea salt and freshly ground black pepper 1 tbsp extra virgin olive oil 80ml chicken stock 2 tbsp white wine 2 tbsp drained capers A handful of fresh flat-leaf parsley leaves 1 Grate the zest from the orange and set the zest aside. Slice off the top and bottom of the orange with a knife and then follow the curve of the fruit to remove any remaining peel and the white pith all around. Working over a bowl,…

How to MAKE THEM YOURSELF Foliage wreaths Craft simple wreaths to bring an on-trend botanical element to your home this season. To make, take a length of pre-soaked willow and gradually shape into a ring, twisting the ends around and in as it is formed. The ring should hold its shape without having to tie any ends in. Leave to settle and dry. Next, secure rosemary sprigs along the sides and base of the wreath with florist’s wire. Using our photograph as a guide, secure ferns at the base of the wreath with florist’s wire. Next, position the biggest of your flowers (we used hellebore, narcissi and star of Bethlehem), secure with florist’s wire, and then adding the smaller flowers in the same way. Last year I became head chef at The Latymer, the fine-dining restaurant at Pennyhill Park in Surrey. It’s a country house hotel in the most stunning setting – there are 123 acres on the estate. I am so privileged to work in such a special place, I have to pinch myself when I turn up at work in the morning. The view from the main terrace of an oak tree, looking out beyond to the golf course, is my favourite and it’s right outside the restaurant.
