HERE’S AN UNCONTROVERSIAL admission: I love brownies. And here’s a controversial one: I’ve made a few batches using box mixes and found myself relatively satisfied. But all things being equal, I’d rather make brownies from scratch, for the deeper, more complex flavor they deliver.
A typical box mix consists of measured dry ingredients (flour, cocoa powder, sugar, salt, leavening agent, and in some cases artificial ingredients to enhance flavor or ensure even baking). You add oil, eggs, and sometimes water and then stir together and bake. I knew that I’d have to measure my own ingredients, but beyond that, I wanted my recipe to be as simple as possible and require just one bowl, like the mixes do.
