Stuart’s Perfectly Prepared Peppers
Ingredients
• 8 red and yellow peppers, mixed • 2 garlic cloves, chopped • 180 g halved cherry tomatoes • 180 g ball mozzarella, grated • 160 g gorgonzola • 150 g brown rice • 70 g sunflower seeds • Basil & parsley, chopped • Chives, finely-chopped • 300 g vegetable stock • String, for tying Filling:
1. Heat the oil in a medium pan and fry the sunflower seeds until lightly toasted.
2. Add the rice, and fry until the grains are glossy.
3. Stir in the garlic, add the stock, and bring to the boil.
4. Cook for 10-12 minutes, or until the rice is tender.
5. Remove from the heat and add the spring onions, cherry tomatoes, mozzarella, gorgonzola and herbs.
