PORK TENDERLOIN WITH BALSAMIC BRUSSELS SPROUTS

2 Tbsp olive oil, divided1 tsp garlic powder1 tsp dried oregano, crushed1 tsp dried thyme, crushed½ tsp ground cuminSea-salt flakes and freshly ground black pepper, to season500g pork fillet, trimmed200g brussels sprouts, trimmed and quartered1 red onion, thinly sliced1 Tbsp balsamic vinegarFresh oregano, to serve
STEP 1 Preheat air fryer to 200°C. In a small bowl, stir together 1 tablespoon olive oil, garlic powder, oregano, thyme and cumin, and season with sea-salt flakes and pepper. Rub mixture all over pork.
STEP 2 Place pork in air-fryer basket. Cook at 200°C for 17–20 minutes, turning once halfway through, or until pork reaches 60°C internal temperature. Remove and cover loosely with foil to rest.
