For this special time of year we wanted a truly winning Christmas dinner, so we’ve turned to champion of MasterChef 2024, Brin Pirathapan, for the main event (p11). His Sri Lankan Tamil-inspired turkey roast will leave you glowing all the way until New Year’s Day, complete with devilled brussels sprouts and curry leaf & mustard seed roasties. Dry-brined turkey with spiced butter Not heard of dry brining? It’s a method of salting the turkey in advance, which results in juicy, flavourful meat. Spiced butter – infused with Sri Lankan curry powder, spices and fresh garlic and ginger – also deepens the flavour and is a delicious aromatic alternative to a standard herby butter. Mince pie frangipane tart Combine a classic almond-infused bake with Christmassy mincemeat and tart cranberry sauce for a simple, festive treat. Spicy Bloody Mary eggs with crunchy croutons Here’s a dish that delivers punchy flavours and a little ‘hair of the dog’. There’s only a splash of vodka but you can just leave it out if you’re serving this to children.
