Indian chicken and potato tray cake
SERVES 4-6 PREP & COOK TIME 1 HOUR 10 MINUTES
50g butter or ghee, melted3 medium (600g) potatoes, scrubbed, chopped into 3cm pieces1 large (200g) onion, chopped coarsely1 tablespoon finely grated ginger2 cloves garlic, crushed1 teaspoon garam marsala1 teaspoon each ground cumin and ground coriander2 tablespoons finely chopped coriander stalks2 tablespoons lemon juice6 large chicken drumsticks3 medium (250g) Roma tomatoes, quartered3 sprigs fresh curry leaves toasted roti, natural yoghurt, eggplant pickle or mango chutney, for serving
1 Preheat oven to 220°C (200°C fan-forced). Line a large shallow baking dish with baking paper.
