SHERRY
From the chalky soils around Jerez (heh-reth) in southwestern Spain, production dates back to 1000BC. White wine is fortified then aged, often for decades or more, in the solera fractional blending system, creating complex, lively wines. Sherries range from bone dry to very sweet.
PORT
With vines cultivated since 200BC, Portugal’s Douro is the world’s third oldest protected wine region. Port is always sweet and made from very ripe red grapes, but some are aged (Tawny, 10, 20, 30 year olds) and some fresh, fruity and fiery (Vintage, LBV).
VIN DOUX NATURELS (VdN)
Usually from around the Mediterranean coasts, these lightly fortified (around 15 per cent), pale-coloured, muscat-based wines are medium-sweet, perfumed and fresh.
