She’s fourth in line to the British throne, but Princess Charlotte – who celebrates her second birthday on May 2 – has never let her royal status get in the way of being an exuberant toddler. Just like her big brother George (three), Charlotte is full of fun and won hearts in Canada when she travelled there on her first official royal tour in October last year, in particular during a playdate where was enchanted by balloons, a bunny and a service dog called Moose. Chicken and broccolini with oyster sauce SERVES 4 PREP AND COOK TIME 30 MINUTES 1½ tablespoons vegetable oil 6 large (750g) chicken thigh fillets, sliced thinly 3cm piece fresh ginger, peeled, chopped finely 2 cloves garlic, chopped finely 1 medium (170g) red onion, cut into wedges 1 medium (200g) red capsicum, seeded, cut into strips 1 bunch (200g) broccolini, cut in half crossways, then stems cut in half lengthways (see Julie’s tip) ⅓ cup (100g) oyster sauce 2 tablespoons salt reduced soy sauce 1 Place a large wok or frying pan over medium-high heat. The majority of vegetables’ nutrients are actually within the skin and contain antioxidants that fight against free radicals (groups of atoms that cause damage to the body, such as heart disease, when produced in excess). Choux pastry is unusual because it’s “cooked” before it’s baked and uses steam created by the eggs in the recipe as the raising agent. The puffs “puff” because the steam is trapped inside them, causing them to rise up and out. Each choux puff needs enough room on the oven tray to spread, so leave 3cm between each. This also allows the heat to circulate and brown the puffs evenly. Once cooked and cooled, the puffs can be frozen, then refreshed in the oven before serving. “Choux”, meaning little cabbage, describes cream puffs accurately. Basic roast chicken SERVES 4-6 PREP AND COOK TIME 2 HOURS 1.6kg whole chicken 1 quantity flavoured butter (see recipes, right) 1 quantity stuffing (see recipes, right) 2 cups (500ml) chicken stock 1 Preheat oven to 220°C (200°C fan-forced). 2 Remove and discard any fat from cavity of chicken. Pat cavity and skin dry with paper towel. Tuck wings under body. 3 Run fingers between skin and the breast meat. Spoon half the flavoured butter under skin; push through skin to cover breast and tops of drumsticks and thighs. 4 Fill cavity with stuffing.
