Living in a 37th-floor Sydney apartment had worked very well for Lauren and Aaron, but there came a point in time when they realised it was important to them that their growing family was able to feel the grass between their toes. What do you like about working with paper? “I don’t see paper as a fragile medium. For me, paper has longevity and gets better with age and it’s turning that one-dimensional piece into something that has dimension.” What kind of companies do you create pieces for? “I do a lot of commercial jobs. TOMATO & BOCCONCINI RICE-STUFFED PEPPERS Serves 4 (or 8 as a side dish,) 2 tbsp olive oil1 medium onion, finely chopped2 cloves garlic, crushed2 tomatoes, finely chopped1 tbsp tomato paste¼ tsp salt2½ cups (625ml) chicken or vegetable stock1 cup long grain white rice3 tsp chopped lemon thyme½ x 220g tub bambini bocconcini½ cup grated parmesan4 large red bullhorn capsicums400g jar tomato and chilli pasta sauce1 tbsp caramelised balsamic 1.
