BEETROOT & FETA TARTS Makes 32 6 sheets filo pastry 100g butter, melted Filling 2 eggs125ml thickened cream250g cooked beetroot, finely chopped (see tip)130g Greek feta, finely crumbled1 tbsp chopped thyme leaves, plus extra sprig tips to serve 1. To make filling, whisk eggs and cream in a small bowl until combined. Stir in beetroot, feta and thyme. Season well. Set aside. 2. Preheat oven to 180°C.
