MOJITO ICE BLOCKS Makes 6 ⅓ cup caster sugar ¼ cup lime juice ¼ cup mint leaves 2 tbsp white rum 300ml soda water 3 slices lemon, cut in half Extra 12 mint leaves 1. Combine sugar, juice and mint leaves in a mortar and pestle and muddle. Set aside and allow to infuse for 30 minutes. 2. Pour mixture into a large jug. Discard mint leaves, squeezing out liquid. Add rum and soda (see tip, below) and stir to combine. Place a piece of lemon in the bottom of 6 x 80ml ice block moulds. Pour in mojito mixture. JOYCE AND John, owners of this 1990-built apartment in beachside Melbourne, wanted to update, open up and reinvent their entire home, including turning the kitchen into a brand new space. The original kitchen was an old-fashioned U-shaped design that didn’t make the most of the footprint, so they briefed Fiona Austin of Austin Design Associates to devise an integrated look and a room designed to maximise the space and embrace their home’s lovely water views. LIKE MANY homeowners, Leeanne and Angelo loved the leafy location of their Brisbane home, but were unhappy that the original ’80s kitchen, separated from the dining room, wasn’t a more sociable space. “We wanted to open up the area to be more conducive to entertaining friends and family,” says Angelo. FINDING A WAY to define Fleur Yorston is not easy. Labels such as sculptor, painter, jeweller, teacher and businesswoman go some of the way, and she can cite a master’s degree in fine arts and a diploma in interior design among her qualifications.
