As this issue goes to press, we are reaping the rewards of finally being able to be on the road again, searching out the most interesting people and places to keep you entertained and inspire travels of your own. We travelled to Oberon in the NSW Central West where we went on a mushroom hunt with expert guide Ian Redpath and were rewarded with two dinners worth of slippery Jack and saffron milk caps. A simple pickle recipe with no canning equipment or methods needed that’s great for sandwiches, tacos, salads and more. Just combine and keep in the fridge for up to two weelcs. You can add more sliced onion over time or when all eaten to make your pickling liquid go further. 2 large red onions, sliced very thinly ½ cup water (plus extra boiled water for blanching) ½ cup Budburst Black Plum Infused Vinegar 3 tablespoons sugar or honey 1 teaspoon peppercorns ½ teaspoon salt Blanch onions under boiling water. RECIPE EXTRACT CHONGQING HOT GLASS NOODLE BROTH Serves 2 One can’t consider chillies without visiting Sichuan, China’s spiciest region. It was here that the fruits first blazed into the country having crossed over the Himalayas, and here where they are used most keenly, combined with the piquancy of native Sichuan peppercorns. This lip-puckering hot-and-sour broth comes from the city of Chongqing, also famous for eye-wateringly fiery hotpots. Sweet potato noodles are made fresh by Sichuanese vendors, who pass batter through sieve-like holes directly into boiling water, but can be bought dried in Chinese supermarkets. Seek them out for their glorious, slippery transparency, which makes an agreeable contrast to the riot of crunchy toppings. PHOTO ESSAY Jonah Lafferty lives and works in North Queensland and the Northern Territory. He is currently working for the Anindilyakwa Land Council to help the traditional owners of the Groote Archipelago move toward improved Indigenous data sovereignty and governance.
