Thousands of additives are used today: flavourings, colourings, sweeteners, enhancers, emulsifiers, stabilisers, texturisers, thickeners, preservatives, humectants as well as bulking, gelling and fortifying agents. Many additives are inadequately tested and the effects of combining some of these chemicals are unclear. Some raise serious health concerns:
• Artificial food dyes, found in thousands of foods, have long been controversial. The US Center for Science in the Public Interest is campaigning for nine artificial food dyes to be banned and replaced with natural dyes following a report concluding the nine approved dyes were carcinogenic, and cause hypersensitivity reactions and behavioural problems
