Stuffed whole roasted winter squash
A colourful combination of sweet winter squash, healthy kale and quinoa

Ingredients:
1 Preheat oven to 200°C/180°C fan/gas mark 6.
2 Cut the top quarter off each squash, discard. Discard seeds. Brush the inside of the squash with a little oil, then arrange cut sides down, on a baking tray. Bake in the oven for 25-30 minutes.
3 Heat 1 tbsp oil in a medium pan over medium heat. Add onion and cook, stirring, until tender, about 6 minutes. Add sage, thyme, garlic, beans, quinoa, tomato and kale. Cook until the greens wilt, about 2 minutes. Season with salt and pepper.
